Strawberries and cream areĀ an iconic summer treat, and raw strawberry cheesecakeĀ takes that creamy strawberry taste to whole new level.
Enjoy this wholefood summer treat all year round. It's gluten free, dairy free, and vegan. Filled with natural nutrition, it won't disappoint. Strawberries and cashew nut cream have never tasted better!
Prepare the base
1 c raw walnuts
1 c shredded coconut
1 c raw hazelnuts
1/4 c cacao powder
1 tsp vanilla essence
10 medjool dates
2 T coconut oil
Line a 20x20 cm spring bottom cake tin with baking paper.
Use a food processor to lightly chop nuts until chunky. Add remaining base ingredients and process until combined. When a dough ball forms press into the tin.
Create the filling
2 c soaked raw cashew nuts
2 c chopped fresh or defrosted strawberries
1/3 cĀ maple syrup
1/2 c coconut oil
1 tsp vanilla essence
Juice of 1 lemon
1/2 tsp beetroot powder
Place all filling ingredients in a power blender. Blend until smooth. Pour onto base.
Freeze and serve
Sprinkle with cacao nibs and place in freezer to set for at least 4 hours (overnight is best). Cut frozen and enjoy!
