This raw chocolate ganache cake is a healthy take on the world's most decadent cake. Packed full of nutritious goodness this cake won't leave you feeling sluggish.
What we eat impacts our body in numerous ways - weight, physical performance, and sense of wellbeing.
But life without cake, is no life at all! This little beauty is made with a base of healthy nuts and a filling of cocao and avocado mousse. Great for body and mind.
If you are looking for a fabulous healthy celebratory cake - you're going to love this recipe.
Create the base
1 c hazelnuts
1 c walnuts
1 c cashew nuts
10 medjool dates, pitted and rinsed
2 T coconut oil
2 tsp orange zest
Line a 20 x 20 cm spring bottom cake tine with baking paper.
Use a food processor to lightly chop nuts until still chunky. Add remaining base ingredients and process until combined. When a dough ball forms it is time to stop and press into the tin. If you over-process the nut oils will start to release - very messy!
Create the Filling
1 c soaked raw cashew nuts
3 ripe large avocados
2 tsp vanilla essence
2 T coconut oil
3/4 c cacao powder
1/3 c maple syrup
Place all filling ingredients in a power blender. Blend until smooth. Pour onto base.
Freeze and Serve
Place in freezer to set for at least 4 hours. Overnight is best. Cut frozen. Garnish with fresh fruit before serving.
For extra crunch, you can also sprinkle cacao nibs and dried raspberries.
